Fall back undeniably could give you an extra hour of sleep, but don't get to complacent with the extra rest, you have two months to finish strong.
Today I prepared a hot meal for individuals suffering with mental illness, these beautiful people aren't walking around with sound mind, they aren't afforded the luxury of planning and thinking about finishing strong. My children and I were on a mission to serve them, what we thought would be a blessing to them, in turn blessed us beyond measure.
Today, if you can't think of anything to be thankful for, I can reassure you a sound mind should be on the top of the gratitude chart. The ability to create, plan, and act out on our plans is beyond a blessing.
When you have a sound mind your attitude is controllable, your mood is controllable, how you treat others is controllable.... Stay in control.. Choose happiness! Choose joy! Choose treating people good, with kindness! Choose living your purpose and walking in gratitude and love.
LIMA (BUTTER) BEANS RECIPE
- 1 quart water
- 2 smoked ham hocks or shanks
- 3 cups chopped onions
- 1 cup chopped celery
- 1 cup chopped green bell pepper
- 1 tsp each red, white and black pepper
- 1 tsp each garlic and onion powder
- 1 tbsp minced garlic, oregano and thyme
- 1 tsp or more Tabasco sauce
- 3 to 4 bay leaves
- 1 pound lima beans (preferably soaked in water overnight)
- Salt to taste
In a 5 qt heavy pot add the water, beans, ham hocks, onion, celery, bell pepper, peppers, garlic and onion powder, garlic, oregano, thyme, Tabasco, and bay leaves. Cover with cold water and bring to a boil. Cover pot and simmer for 1 hour until ham on hocks starts to fall off.
Remove ham hocks from pot and pull ham from bone, chop and return to pot.
**During cooking time you may need to add water to pot. **If during cooking time beans stick to bottom of pan do not scrape pan. Change to another pot.
Reduce heat to simmer. Cook about 30 minutes to 1 hour more or until beans are soft. Add a little salt, let cool. Serve over rice.
