Easy Jerk Dinner

Someone ask me for this recipe the last time I prepared it.. I had to pay attention this time because I'm always free-styling in the kitchen.. 

Here's the recipe for a super easy and quick Cajunany Jerky meal (yep I just made that up).  Disclaimer; this is not for the weak, it's spicy. Eliminate the cayenne pepper if need be.

Jerk Marinade & Dry Spices

Marinade  

4 tablespoons olive oil 

4 tablespoons soy sauce 

1/4 cup apple cider 

1/4 cup pineapple/orange juice

2 tablespoons lime juice 

Dry Ingredients 

Dash Salt 

1 teaspoon garlic powder

1 teaspoon onion powder  

1 teaspoon ground cinnamon 

1 teaspoon allspice 

1 teaspoon white pepper

1 teaspoon cayenne pepper 

1 teaspoon paprika

I like to put a little foil dome oer the salmon a few minutes before taking it off the grill. It adds moisture inside and a nice crisp on the edges.

Rice & Beans 

1 lb pound bag of Yellow rice 

2 cans of kidney beans 

1 can coconut milk 

Equal parts water 

1 teaspoon paprika 

1 teaspoon garlic powder 

1 teaspoon cayenne pepper

Bring water mixture to a boil then add beans, rice and seasoning to boiling water mixture. Cook as directed.

Cabbage 

Chop whole cabbage. Place in a pan of olive oil. Add cayenne pepper, garlic powder and salt. Cook until cabbage is soft.

I prepared my shrimp skewers and salmon on a stovetop grill. You can bring it outside or prepare in the oven. Whatever you choose... Enjoy ❤️
